In our first appetizing program in 2021, we will go back to the well-rounded objects of culinary art: We are making Tortellini in Brodo with guests via video call. Freia cooks virtually with Hanna and Marie; dumplings in vegetable broth with different fillings: one variant with meat and one with mushrooms. Tortellini in broth keep you warm in cold weather and lonely living situations. They are served with Italo-Pop, wine and beer. Bon Appétit!
If you want to cook with us, prepare the dough with 400g (or a little more) flour, 4 eggs and a pinch of salt:
Pile the flour, make a well in the middle. Add a good pinch of salt and the eggs into the well. Mix everything with a fork, then work with your hands to form a firm, smooth dough. Cover and let rest for 10-15 minutes.
Soup vegetables (celery, carrots, leek, onion, parsnip)
Champignon mushrooms or Portobello mushrooms
200g lean, juicy pork
100g turkey breast
50g air-dried raw ham
1 egg and 1 yolk
